Paddy's Day Pistachio Pudding Cookies


If you're a fan of pistachio like me, then you have to try these, they are sooo scrummy. I've gobbled down two and I'm not even half way through writing this post...

I know we are about 6 weeks away from St. Patricks Day but how perfectly green and celebratory would these be to bake on the day or for the day?

Besides, you'll need to order in the Pistachio Jell-O pudding mix from the US of A, as I'm not aware we have it readily available here (try American sweet shops online though).


Makes 15-20

The how to...

1/2 cup butter
1/2 cup granulated sugar
1/4 cup vegetable oil
1 large egg 
1/4 cup water
1  tsp vanilla 
2 packs of pistachio instant  pudding mix
1/2 teaspoon salt
1 tsp baking powder
2 cups plain flour
Extras

Feel free to add cranberries (1/2  a cup chopped up, or more pistachio nuts to the mix as the Jell-O has some, but not a lot)

Beat the butter, sugar (you can always soften my zapping it in a microwave for 10s) and vegetable oil in a bowl, then add water and egg, beating until smooth.


I am one messy cheffy.

Add the Jell-O pudding mix, pistachio flavor, salt, and baking powder, beating until smooth. Stir in the flour gradually. Using a tea or tablespoon spoon onto a parchment layed tray and flatten the little ball of dough slightly with the bottom of tumbler glass.

Bake for 15 mins at 180C, keep an eye on them and take them out as soon as they are a little browned, but not so much that you can't see the green!
